Gilbert Shiraz

The Gilbert Shiraz is intensely flavoured with bright fruits like blackcurrants, black cherries and blueberries that lead to a clean and long finish with a peppery and spicy aftertaste.  

Select Head harvested in small lots in the early morning taking advantage of the cool morning temperatures. The fruit was then destemmed and cold soaked for 48 hours. This provided longer time on the skins, and allowed extraction of optimal tannins and colour from the grapes. 

To maintain the bright fresh fruit character, the fermenters were basket pressed and matured in new (15%) and older French oak for 15 months, prior to blending and bottling.

This wine will benefit from cellaring for 10 or more years.
